Salted Caramel with Miso – A Sweet Twist on Tradition

Miso is more than just a savory soup base—it’s a versatile ingredient that can surprise and delight in unexpected ways. This sauce takes the comforting richness of caramel and elevates it with the deep umami of our naturally aged Mame Miso.
The result? A luxurious sauce that’s both sweet and savory, with a depth of flavor that lingers on your palate.


Ingredients
• 150 g heavy cream
• 80 g butter at room temperature
• 200 g brown sugar
• 1 tbsp water
• A few drops of lime juice
• 57 g Noda Mame Miso Paste
How to make
1. Start the Caramel Base
In a saucepan over medium heat, add brown sugar and water. Stir gently until the sugar fully melts.
2. Develop the Color
Let the mixture cook until it begins to darken slightly—this is when the caramel’s rich flavor develops.
3. Add the Cream
Slowly pour in the heavy cream while whisking continuously to create a smooth texture.
4. Strain & Blend
Remove from heat, strain the caramel to remove any crystals, then whisk in butter and miso gradually until fully incorporated.
Serve & Enjoy
Pour generously over vanilla ice cream, drizzle on pancakes, or swirl into yogurt for a sophisticated treat.
